To the day exactly 13 years ago – namely 10 July 2006 – Mrs. Ramsbacher Senior completed her training as a herbal pedagogue at Krastowitz Castle near Klagenfurt. At this time she also had the kitchen and catering for the approximately 60 guests at the Ramsi Children’s Hotel. We will now tell you how this came about and how Ramsi’s world of herbs developed from it!

Katharina “Käthe” Ramsbacher is our “Frau Senior” and is also affectionately called “Grandma Ramsi”. Although she is retired, you can still see her almost every day in the children’s hotel. Full of energy she is still happy to help wherever she can, she takes over the transfer of guests from time to time and is always there with help or advice. In her well-deserved retirement she dedicates all her passion to the world of herbs, flowers and plants.
Even during her time as a cook in the Ramsi children’s hotel – 40 years – the Ramsbacher family cultivated vegetables, salads and herbs for use in the hotel kitchen.
While Käthe Ramsbacher conjured up delicious dishes in the kitchen for her guests, they also liked to bring herbs from their excursions into the kitchen. This aroused her interest and she decided to do a real herb training.
So the beautiful herb garden of today was laid out. Here we will tell you what there is to discover.
If you turn into Ramsi’s world of nature experiences by car, the sight of a beautiful “bee meadow” with wild herbs awaits you. Grandma Ramsi shows us that this is not only for the pleasure of the insects. Right next door is her beautiful herb garden with countless herbs, edible flowers, shrubs and salads. “When the soul needs a holiday, go to the garden.” – Guests are also warmly welcome here and enjoy not only the magnificent view of the Carnic Alps and the Nassfeld.
Do you know the saying “a herb has grown for every aches and pains”? In lovingly laid out herb snails and beds (including a “first aid bed”) there are really all kinds of herbal aids, which Frau Senior also dries and processes for wonderful teas. Also every passionate cook has to go into raptures here, because there are a lot of spice plants like dill, several kinds of thyme and basil and much more.
As we all know, the eye also eats, wonderful edible flowers such as spice days and nasturtium await us here. They also have valuable, health-promoting ingredients with their bitter substances and oils.
What do you think is going in the popular Ramsi wild herb soup? Mrs. Senior has collected diligently and with 10 herbs we stopped counting enthusiastically. Just to name a few: Nettle, ribwort plantain, sorrel, French herb, gherkins, cucumber herb, wild carrot, dandelion leaves, browns, meadow lavender herb… and to each herb Mrs. Senior can tell you something worth knowing and the health aspects.
Did you know, for example, that chicory was bred from dandelions and chicory? Many wild herbs contain important bitter substances that are not so popular and were therefore strongly “bred away”. “They are very important for digestion and our body really needs them,” says Ms Senior. And did you know that you can eat nettle seeds? They are particularly tasty on a sandwich or in an egg skewer.
The collected wild herbs are then – in addition to crunchy salad and freshly cut chives – taken to the Ramsi kitchen and processed into a wild herb soup. “Our wife Senior is a real ‘herb encyclopedia'”, describes our chef Christoph.
During our journey through Ramsi’s world of herbs, guests come again and again to Mrs. Senior and ask her for advice. She passionately likes to give information and for the expedition “Naturschmaus” she gives the necessary herb slice.
Together with our expedition leader Anni we bake pita bread next door in the clay oven – seasoned with natural herbs from the Ramsi nature experience world. Once a week there is also the opportunity to take part in a natural cosmetics workshop.
During this workshop ointments and creams with the herbs are produced directly in the herb garden. You must have experienced something like this during your holiday! If you want to take some of Ramsi’s herbal world home with you, Grandma Ramsi has prepared a herbal salt or herbal oil for you at the reception.
