Ramsi’s favorite recipes
Once your favourite pizza is in the oven, gather everyone in the kitchen. Together, watch how the fine dough crust becomes crispy and the cheese on the pizza begins to blubber.
Soon it will be ready for eating!
On top of the pizza, we have scattered oregano from Grandma Katharina’s Herb Garden. It makes the dish even more delicious.
But not only our family pizza, also sweet pancakes are among the best Ramsi’s favourite recipes for home. They are absolute favourites in Ramsi’s Alpine-Adriatic cuisine. You can easily make and enjoy them at home, too.
#1: Ramsi’s favourite home recipes
for 4 persons
Dough
450 g wheat (whole grain) flour
1 pack dried germ
1.5 tsp salt
1.5 tsp sugar
300 ml lukewarm water
3 tbsp oil
Sugo
375 g tomato pieces
1 onion
3 cloves of garlic
Salt
Pepper
Oregano or pizza spice
3 tbsp tomato paste
Topping
350 g lean ham
350 g grated cheese
Optionally: tuna, corn grains, mushrooms, salami

Preparation
Mix the flour, germ, salt, sugar, water and oil in a mixing bowl. Drain the dough until it detaches from the bowl. Use a wooden cooking spoon, mixer with kneading chop or the food processor and finish it off by hand. This way the dough becomes smooth and supple. If the dough sticks, simply add more flour.
Leave the dough covered in a warm place for about 20 minutes.
Meanwhile, put the tomato pieces into a fine-mesh sieve. Drain the excess liquid a little and place the tomato pieces in a bowl.
Peel the onion, cut it in the small cubes and add. Season the tomato pieces with garlic, salt, pepper and oregano and mix with the tomato paste.
Prepare the chosen ingredients for the topping – wash and cut.
Preheat the oven to 200°C hot air.
Cut baking paper to baking tray size, roll out the dough evenly on the paper, put it on the tray and sprinkle with sugo. Top with ham, cheese and other ingredients at will. Sprinkle again with some oregano or pizza spice and bake for about 20 minutes.

#2: Ramsi’s favourite home recipes
6 portions
Ingredients
250 g flour
0.5 l milk
2 eggs
1 pinch salt
Some mineral or soda water
1 dash of oil or butter for the pan
1 tbsp caster sugar to sprinkle
Apricot jam as spread
Preparation
First, stir in the flour, milk, eggs and salt with the whisk in the bowl. Then leave to stand for about 10 minutes to make the dough a little thicker. Stir well again. If the dough is too thick, dilute with some mineral or soda water.
In a coated pan, heat a dash of oil. The oil should be quite hot. Then scoop some dough with a ladle in the middle of the hot pan. Swivel the pan again and again until the bottom is evenly thinly covered with dough.
Use the pan turner to turn the pancake several times and bake from both sides golden yellow. Sprinkle with jam, roll together and serve.

Serving proposal
Sprinkle the pancakes with icing sugar and garnish with fresh fruit at will.
